Freezer Elderberry Lollipops: The Kid-Friendly Cold Season Treat
Turn immune-boosting elderberries into a sweet treat your kids will actually beg for this winter. These freezer elderberry lollipops require only three simple ingredients and no fancy equipment.
By keeping them in the freezer, you skip the hard-crack chemistry and preserve the vibrant, fresh flavor of the juice.
Ingredients
1 cup elderberry juice (wildcrafted or store-bought)
1 cup organic cane sugar
1 tbsp lemon juice (freshly squeezed)
Equipment
Silicone lollipop moulds
Paper lollipop sticks
A glass of ice water and a sheet of tinfoil (for testing)
Step-by-Step Instructions
Prep your station. Place lollipop sticks into your silicone moulds. Lay a sheet of tinfoil next to your stove.
Combine and simmer. Bring the elderberry juice, organic cane sugar, and lemon juice to a boil in a small saucepan over medium-high heat. Stir until the sugar dissolves completely.
Boil and thicken. Reduce heat slightly to a steady bubble. Stir frequently as the mixture thickens and reduces.
Do the tinfoil drop-test. Don't have a candy thermometer? No problem. After about 10–15 minutes of boiling, drop a tiny spoonful of the syrup onto your tinfoil, then drop it into the ice water. If it hardens instantly into a brittle, crackable thread, it is ready. If it's still chewy, keep boiling and re-test every 2 minutes.
Pour and freeze. Carefully pour the hot syrup into your silicone moulds. Let them cool completely at room temperature, then pop the tray directly into the freezer.
Storage & Serving Tip
Because these are made for the freezer, they will get sticky if left out on the counter. Keep them stored in a sealed container in the freezer and hand them out straight from the icebox the moment a scratchy throat or seasonal sniffle pops up!
